About this coffee
ORIGIN
El Salvador – Himalaya Maragogype
Maragogype is one of the most striking coffee varieties. It is a natural mutation of Typica and is known for its exceptionally large beans, often referred to as elephant beans. Their size catches attention, but what truly makes this coffee special is the coffee in the cup: remarkably elegant and complex for such a large bean.
At an elevation of 1,550 meters, Mauricio Salaverría, known by all as Moe, cultivates this rare variety on Finca Himalaya. He processes the coffee as Natural, allowing the cherry beans to slowly dry. This slow drying allows the sweetness and fruity character to fully develop. The clay and volcanic soils of the farm provide the coffee with additional depth.
Moe continues to experiment and pays great attention to every step of the process. This has established Finca Himalaya's reputation for exceptional coffees, including winning multiple lots in the Cup of Excellence. In the cup, one can expect much sweetness, lively fruit, and a velvety texture.
We present this coffee!
A recipe for the perfect espresso is dependent on many factors: machine, burr, water, filter basket, beans, etc. In our bar in Den Haag, we typically start with this recipe:
19 grams of coffee for a 45 gram output (double shot).
We begin with a bloom time of 25 seconds.
