About this coffee
Ethiopia is known as the birthplace of coffee. The story goes that goat herder Kaldi discovered that his goats began jumping after eating berries from the coffee plant. This caught Kaldi's attention, as did the monks living nearby. They decided to make a drink out of the berries, which we now know as coffee. This old tale illustrates the long history and importance of coffee in Ethiopian culture.
In Ethiopia, agroforestry techniques are widely used. This is a farming system where both above and below ground agriculture are combined on the same plot of land. This mixed farming positively impacts biodiversity and soil fertility. With the perfect combination of altitude, nutrition, rainfall, warm days, and cool nights, Ethiopia is the climate where coffee plants thrive.
These coffee beans come from various farmers who process their coffee at washing station Adado. After harvesting ripe berries, a meticulous processing method is applied at Adado. Damaged berries are immediately sorted out. The rest are washed with clean water and laid on raised beds to dry in the sun. This process takes 2 to 4 weeks, and the berries are regularly turned to ensure even drying. The result is coffee with a delicious floral aroma and the taste of berries and sweetness.
This specialty coffee from Yirgacheffe is best suited for a method that reveals clarity: filter coffee, where the paper holds back the oils and the aroma stands out.
Using a V60, you can bring out the acidity and floral aspects most clearly. Use about 15 grams of coffee with 250 grams of water and brew for about three minutes. If you want more body, choose a French press instead. And in the summer, this coffee is an excellent base for cold brew, where the fruitiness is softened and sweet.
Keep the bag at room temperature and sealed, and prepare just before use. The expiration date is on the packaging, so you know exactly how fresh your coffee is. For more on the process, you can read our guides on the V60 and cold brew. Other specialty coffees are available at our specialty coffee.
