Graciano Cruz is an absolute Titan of coffee production. He has two legendary farms in Panama, one in El Salvador, and now oversees other projects all over the world. For a long time he was known for refusing to use water during processing, sticking exclusively to dry processing like naturals and honeys. Now he ventures out a bit for exceptional lots, but these dry coffees are his bread and butter. This mastery is on full display with this lot- explosively bright and complex, this coffee is truly one of one.
