Over deze koffie
This exceptional lot is composed entirely of a small-screen coffee variety, mostly graded to a precise screen size of 13. The inherent density and compact cellular structure of these smaller beans result in a highly concentrated, distinct flavor profile that elevates the cup quality far beyond standard classifications. Our process initiates with a rigorous selection protocol: we combine precisely 90% optimally ripe cherries with a 10% over-ripe allocation to introduce structural depth and complexity. Following an initial buoyancy separation in water to eliminate defective fruit, the selected cherries undergo a controlled four-hour hydration soak, optimizing them for subsequent refinement phases. To fully preserve their intricate flavor profiles, our cherries undergo a meticulous, 35-day slow-drying process on elevated beds. By limiting each bed to a single, 25kg layer of fruit and positioning them in shaded, highly ventilated environments, we harness low-temperature, high-airflow dynamics. This artisanal method ensures an exceptionally gentle and uniform dehydration.
