About this coffee

SOURCE

Guatemala – Ricardo Zelaya

This coffee originates from Finca Puerta Verde, a name you might be familiar with. However, this coffee offers a completely different experience from the Bourbon lots we’ve recently offered. Although the coffee comes from the same familiar farm, this release showcases the rare Java variety and reveals a completely new side of Antigua’s coffee potential.

For years, we have worked together with great pleasure and dedication to Ricardo Zelaya and his team, whose commitment to quality and innovation continues to surprise us season after season. Puerta Verde is located in Antigua, one of the most renowned coffee-growing regions in Guatemala, and benefits from fertile volcanic soils, a unique microclimate, and meticulous quality control at every step of the production process.

Ricardo has modernized the farm while respecting its rich history. This carefully produced Java lot reflects his vision and offers a sophisticated and refined coffee with exceptional clarity, floral complexity, and lively sweetness. A beautiful proof that even a familiar farm can continually surprise us.

We set this coffee!

The perfect espresso recipe is dependent on many factors: the machine, grinder, water, filter basket, beans, etc. In our bar in Den Haag, we typically start with this recipe:

19 grams of coffee for an output of 45 grams of espresso (doubles).

We start with a brewing time of 25 seconds.
