About this coffee
ORIGIN
Guatemala - Buena Vista
This season, we proudly present a Natural Sidra from Fredy Orantes of Fraijanes, Guatemala. Sidra is a rare specialty coffee variety, a cross between Typica and Bourbon, known for its complex, layered fruit and floral profile. Its high sensory potential, demanding cultivation, and limited worldwide availability make it a highly valued variety among specialty producers.
Fredy's farm is located close to Guatemala City, where cool conditions at high elevations ensure a slow maturation of the coffee cherries and a lively flavor development. After carefully selective picking, ripe cherries undergo approximately 48 hours of controlled fermentation. Then, they are dried on raised beds for 22 days, turning regularly to ensure even drying under the sun in Fraijanes.
In the cup, the coffee opens with delicate aromas of oolong and rose. As the coffee warms, it reveals layered flavors of chamomile, sencha lemon, mango, and green tomato, with subtle hints of light alcohol. As the coffee cools, notes of wild plum come to the forefront, complemented by a sweet vanilla aftertaste that lingers softly.
We set this coffee!
The perfect espresso recipe is dependent on many factors: machine, grinder, water, filter basket, beans, etc. In our bar in Den Haag, we usually start with this recipe:
19 grams of coffee for a 45 gram espresso (double espresso).
We begin with a run time of 25 seconds.
