About this coffee
ORIGIN
Colombia - Reserva Cafe Femenino
This lot of Femenino coffee is sourced from the Cencoic cooperative in Cauca, Colombia, and is produced by women from the Nasa community. Within this indigenous group, women play a central role in both family life and coffee production. Femenino coffee acknowledges their contribution and offers visibility, support, and better economic opportunities.
Following the peace accords in Colombia, coffee has become a significant source of stability in the region. Through Cencoic, more than 900 female producers receive assistance in areas such as cultivation, processing, and quality improvement, thereby strengthening both their farms and communities.
The coffee is harvested and depulped on the same day, followed by fermentation for 12-18 hours depending on the climate. After washing, the coffee is dried in parabolic drying beds to a moisture content of around 11.5%.
In the cup, you can expect a balanced and expressive profile with notes of chocolate and brown sugar, sprinkled with wild berries and oranges, followed by a sweet finish of caramel and apple syrup, supported by a fruity body and mild acidity.
We set out to do this coffee!
The perfect espresso recipe varies greatly depending on many factors: machine, burr, water, filter basket, beans, etc. In our bar in The Hague, we usually start with this recipe:
19 grams of coffee for a 45-gram espresso (double shot).
We begin with a run time of 25 seconds.
